Friday Foodstuffs- The Stomach Flu edition

Again, Friday Foodstuffs is late.  A mild, but icky case of the stomach flu hit me on Friday and even thinking about about had me running to the bathroom.  I just didn't have the stomach to write this blog post.  Even now, I'm on a steady diet of saltines and ginger ale but I'm feeling a tad better. 

The meals last week weren’t exactly healthy. I was feeling a bit gross even before I got sick. All of the dishes were good but the one that completely blew me away was the Brussels Sprouts, Glazed Pecans and Bleu Cheese Salad…except I totally didn’t follow the recipes.  After reading the comments, I took some of the commenter suggestions and it pushed the dish over the edge of excellence and into the land of TOTALLY FREAKING AMAZING!

First, I cut the recipes (except the dressing) down to one third and I used any extra dressing for my salads during the week. Then, trimmed and halved the sprouts, coated them with olive oil, sprinkled with salt and pepper and roasted at 325 for 30 minutes, stirring once.  Then, I made the recipe as directed but I also added 3 slices of cooked, crumbled good quality bacon.

If you or a loved one is anti-Brussels sprouts, this recipe will make you convert!  Don’t be scared, Brussels sprouts are delicious!

Also, I never got around to making the Chicago Chicken as Thursday was a rough day and takeout Chinese was so much easier....which is probably how I ended up with the stomach flu....

I’m pretty psyched for next week’s meals (if I can eat them).  I obviously didn’t learn my lesson about healthy dishes.  It’s a good thing I’m back in the swing of my gym routine! Also, I’ve failed at taking food pictures in the past but I’m going to try again this week.  I found a few food photography tutorials so if any results are palatable I’ll post them.  I think Friday Foodstuffs needs pictures, don’t you?

Friday:  Chicago Style Sausage Pizza (Crust recipes from here) We did make this.  My in-laws, in town from Ohio, said it was great. 

Saturday:  Out to dinner for a friends birthday.  I had ginger ale and miso soup.

Sunday:  Coconut Peanut Sauce Beef with Pineapple Fried Rice

Monday: Penne ala Betsy, Bread

Tuesday: Slow Cooker Southern Style Shredded Pork (see comments), Lemon Garlic Green Beans

Wednesday: Chana Masala

Thursday: leftovers or takeout

Next week might require some detox after two weeks of stick-to-your-ribs goodness.  What’s your favorite healthy recipe or food site?  I personally love Eating Well.
