Friday Foodstuffs: I Might Have Been Drunk While Writing This

We had a pretty delicious week.  I highly recommend the Greek Chicken and Barley Salad. It was by far my favorite.  Plus, I was able to use to the left over chicken from the Coq Au Vin (which wasn’t good as a meal).   I’m pretty terrible when it comes to “re-purposing” leftovers.  Most of the time we don’t have any because my husband eats enough for four and what we do have is consumed for lunch.  So by using the left over chicken I felt pretty thrifty.  Later that night I did our grocery shopping and realized, when I saw my total,  I actually suck at thrifty.

This weeks menu:


Friday: Homemade Pizza and salads
Saturday: Leftovers
Sunday: Steak, Sweet potatoes
Monday: Baked Potato Soup
Tuesday: Chicken Tikka Masala, Rice
Wednesday: Salmon Masala, Roasted Broccoli
Thursday: Waffles and Bacon, Fruit Salad


There isn’t any theme of plan around this week’s menu other than “I saw it on the internet and it looks tasty”.  I’m trying to do better about tracking my Weight Watchers points through the week...and I'll start after this Gin and Tonic*.   So most of the recipes came from WW friendly sites.  Minus the Chicken Tikka Masala.  That just looked delicious and sometimes you gotta splurge.

Friday Foodstuffs: How I've lost 22 lbs

A few months ago I wrote about how I wasn’t happy with how I looked and I was making a change. Well, it hasn’t been an empty threat.  Since Halloween I have lost 22 lbs, completed the Couch to 5K training program, ran my first 5K race (very slowly, in the pouring rain, where I was narrowly beat out by man dressed as a can of Pabst Blue Ribbon) I even have joined a group training for the Rock n Roll half marathon coming to town in November.

I'm in the Indiana Shirt, to the right of the human PBR can. 
And I’ve done it all while still eating really well.  I’ll admit, it takes some serious discipline and I haven’t had a whole lot of bread or booze since I got started on Weight Watchers. However, I have been able to find satisfying alternatives to fit my cravings yet still stay within the program. Sure I’ve had bad days.  With Max being sick the last two weeks we’ve had take out more times then I care to admit and on Wednesday I’m pretty sure I ate my weight in Dove dark chocolate hearts. Still, it’s a lifestyle change and I won’t let a few days derail me.

Friday: Crab Cakes

Sunday: Steak, Roasted Asparagus with Horseradish Dressing (from Weight Watchers Magazine)
Monday:  Chinese Take-out (going on year 5 of this Valentine's Day tradition with my love)
Tuesday:  Greek Chicken and Barley Salad
Wednesday: Pasta with sauce and veggies
Thursday: Pan Grilled Pork Chops with Grilled Pineapple Salsa, Black Beans

Friday Foodstuffs: I'm Shrinking!

I haven't done a Friday Foodstuffs in awhile.  To be honest, cooking hasn't been nearly as fun since
I started Weight Watchers.  I've found a few good recipes but I miss things like real butter and a
second helping.  Still, I know there are good recipes out there, so I keep searching and cooking.

Oh, and even though you probably care less, since Halloween I've lost 16lbs and dropped a pants
size.  So all this light eating is actually worth it.  Plus, with the Weight Watchers program, I get
the occasional induldgence.  I just can't induldge every day, which is how I ended up at Weight Watchers in the first place.

It's short week of meals because on Wednesday night (my 30th birthday for those who want to send gifts) we're driving throught the night to spend the holidays with my husband's family.  Despite the temptation to get take out every day until we leave, I am going to cook hearty, healthy meals.

Friday: Slow Cooker Chicken Chili  For the record, I just polished of a bowl of this and it was awesome!
Saturday: Sushi (ok, that's not homemade)
Sunday: Grilled Flank Steak with Mango Chutney.  Steamed Snow Peas
Monday: Brett is eating Lightened up Chicken Divan.  I'm going out with a friend to cry over celebrate the fact I'm 30.
Tuesday: Garden Veggie Soup.  Anything in our fridge that might go bad while we are freezing our asses off in Ohio.
Wednesday: Multiple shots of 5-Hour Energy to get us through an overnight drive. And probably birthday cake.
Thursday through December 28th.  Nothing but sausage balls, coffee and Swensons hamburgers.  It's what we do when in Akron.

Sigh. I'm going to have to do a lot of running to make up for the Christmas trip......

Friday Foodstuffs: Weight Watchers? Check.

A few weeks ago I discussed my issues with gaining weight and feeling gross.  In that post I said I was going to do something about it and you know what, I did!

First, I joined Weight Watchers.  I've only had two weigh-ins but in that time I've lost 5.4 lbs!  I'm really happy with the program.  It forcing me to be accountable for what I'm eating but at no point have I ever felt hungry. 

Do I miss the frequent dips into my bosses candy jar?  Of course.

Do I get annoyed with writing every thing I eat down?  Yup. 
Is it worth it in the end?  Totally.

I've already noticed that when I put on freshly washed jeans I don't have to do the "Stretch 'em out" dance!

I also said I was going to do the Couch to 5K program and this morning I finished week 6.  I ran TWO miles!  For some of you that's a warm up but 6 weeks ago I couldn't run a block.  I'm pretty proud of myself.

Cooking has been much easier than I thought.  There are lots of great websites that have recipes with points already figured.  I've had a few good meals that I would make even if I wasn't on Weight Watchers.  There have been a few misses too, like an eggplant parmesean that just missed the mark.  It taught me the lesson that substitutions aren't worth it...especially cheese.  Fat free cheese is disgusting.

This weeks meal plan isn't very heavy on new recipes.  I have a lot in my freezer that needs clearning out and I'm trying to do it while staying within my points range

Friday: Nachos on the skinny
Saturday: Hamburgers (bun-less for me), Black Bean and Quiona with Spinach
Sunday: Grilled Steaks, Baked Sweet Potatoes (to celebrate this girls birthday!)
Monday: Italian Sausage and Pepper Pasta
Tuesday: Green Chicken Soup
Wednesday: Kalua Pork, Steamed broccoli
Thursday: :Bahamian Curry

A Friday Food Stuff Final Hoo-rah

Weight Watchers starts on Wednesday. That could make Friday Foodstuffs less interesting.  I've had such a good time cooking all sorts of new stuff.  I feel challenged to find new, yummy and creative items since I'm menu sharing online. Unfortunately, yummy and creative usually requires butter and cream.  Not really weight loss friendly.  Sigh. 

I didn't post a menu last week since I had a fabulous guest blogger but there is one recipe I made that is a must try.  The Baked Potato Soup from Our Best Bites was ridiculously good.  It makes a TON so it's great for a big family or company.  I added a few dashes or sriracha for a kick but I'd add sriracha to ice cream so take that suggestion with a grain of salt. Thanks to The Double Dipped Life for the suggestion.

Here's what my menu looks like for the week.

Friday: Green Chicken Soup  & Quesadillas
Saturday: Butternut Cassoulet with Bacon and Roasted Garlic
Sunday: Teriyaki Steak Salad, Snow Peas Medley
Monday: Baked spinach and turkey sausage penne No recipe. I’m sort of making this up as I go
Tuesday: Leftover Kalua Pork (frozen from two weeks ago), Roasted cauliflower
Wednesday: Blueberry Pancakes, Fruit, bacon

Also making Buried With Children's Pumpkin Nutella Cupcakes.  A last junk food hoo-rah if you will.

Anyone have any low point Weight Watcher recipes?  I'm gonna miss cheese....

Friday Foodstuffs: Max Eats People Food.

Another late Friday Foodstuffs since one of my besties is in town from Japan! I haven't seen her in a year so I figured the internet could wait! Heck, totally forgot last week. 
 
Last week wasn't particularly great anyways but I do highly recommend the Shrimp and Mushroom Laska from Mediterrasian.com.  It's super delish and perfect to warm you on a cold fall day...or at least I assume it would.   It was 85 degrees here today. I won't see a cold fall day until mid winter.

Here's the plan for this week, even if the part of the week has already occurred.  I had fun with the menu as we got a ton of great stuff from out local food co-op this week!.

Friday:  Turkey Burgers
Saturday:  Take out pizza, Monster Cookies
Sunday: Grilled Omaha Sirloin steaks (an anniversary gift from Brett's parents), Santa Fe Pilaf
Monday: Shrimp, Bok Choy and Snow Peas Stir-Fry
Tuesday: Pasta with Butternut Parmesan Sauce
Wednesday:  Burgers, Roasted Rainbow Carrots
Thursday: Kalua Pork, Black Beans

The Monster Cookies were unbelievable.  That Pioneer Woman can sure make a great cookie.  Also don't cut back on the salt.  It seems like a lot but it's actually what makes the cookie so special.

I also made Max's food this weekend!  It's SO EASY minus the clean up!  So far he's had avocado, peas, carrots and sweet potato.  See!

Friday Foodstuffs- Comfort Food

I think I should stop calling my weekly menu planning "Friday Foodstuffs" because I never seem to actually get the post out on Friday. Oh well! I like alliteration so it's staying FF, even if it is a lie!!

Hands down the best meal last week was the Coconut Peanut Sauce Beef with Pineapple-Ciliantro Rice.  Holy Flavor, Batman!  That dish was divine!  The sauce would be great over pretty much any grilled meat, if you aren't a red meat sort of person.  But the rice...  Ooooh the rice.  You should make it RIGHT NOW.

This week I realized I need to actually read the recipes the night before so I'm prepared. Because I didn't do that, I was frantically thawing shrimp while trying not to burn onions for the Penne a la Betsy  (needed a kick, we added crushed red pepper) and I was browning a pork shoulder at 5:45 AM so I could start the Slower Cooker Barbecue before I left for work. 



Whoops.

Friday: Chana Masala (which I was supposed to make on Thursday but got a pizza instead).  It was great even without the corriander which apparently no grocery store in Savannah carries.  Grrr.

Friday Foodstuffs- The Stomach Flu edition

Again, Friday Foodstuffs is late.  A mild, but icky case of the stomach flu hit me on Friday and even thinking about about had me running to the bathroom.  I just didn't have the stomach to write this blog post.  Even now, I'm on a steady diet of saltines and ginger ale but I'm feeling a tad better. 

The meals last week weren’t exactly healthy. I was feeling a bit gross even before I got sick. All of the dishes were good but the one that completely blew me away was the Brussels Sprouts, Glazed Pecans and Bleu Cheese Salad…except I totally didn’t follow the recipes.  After reading the comments, I took some of the commenter suggestions and it pushed the dish over the edge of excellence and into the land of TOTALLY FREAKING AMAZING!

First, I cut the recipes (except the dressing) down to one third and I used any extra dressing for my salads during the week. Then, trimmed and halved the sprouts, coated them with olive oil, sprinkled with salt and pepper and roasted at 325 for 30 minutes, stirring once.  Then, I made the recipe as directed but I also added 3 slices of cooked, crumbled good quality bacon.

If you or a loved one is anti-Brussels sprouts, this recipe will make you convert!  Don’t be scared, Brussels sprouts are delicious!

Also, I never got around to making the Chicago Chicken as Thursday was a rough day and takeout Chinese was so much easier....which is probably how I ended up with the stomach flu....

I’m pretty psyched for next week’s meals (if I can eat them).  I obviously didn’t learn my lesson about healthy dishes.  It’s a good thing I’m back in the swing of my gym routine! Also, I’ve failed at taking food pictures in the past but I’m going to try again this week.  I found a few food photography tutorials so if any results are palatable I’ll post them.  I think Friday Foodstuffs needs pictures, don’t you?

Friday:  Chicago Style Sausage Pizza (Crust recipes from here) We did make this.  My in-laws, in town from Ohio, said it was great. 

Saturday:  Out to dinner for a friends birthday.  I had ginger ale and miso soup.

Sunday:  Coconut Peanut Sauce Beef with Pineapple Fried Rice

Monday: Penne ala Betsy, Bread

Tuesday: Slow Cooker Southern Style Shredded Pork (see comments), Lemon Garlic Green Beans

Friday Food Stuffs: Looking for Crock Pot ideas

Despite having a short week we are buried in delicious leftovers! The Tomatillo Enchiladas and the Slow Cooker Chicken with Onions, Apples and Rosemary made enough to feed a large family!  The crock pot chicken used to stuff the enchiladas was ridiculously simple and I’ll be using that again for various dishes!  Also, I didn’t make the tomatillo salsa for the enchiladas because tomatillos were ridiculously pricey. Instead I just used the Herdez Salsa Verde and the substitute was fine.  I will try it in the future as it looked too yummy to pass up!

And the pork chops?  So simple but amazingly flavorful.  

Thanks to everyone who commented on their fall favorites.  I finally got my Pumpkin Spice Latte yesterday morning. Oh and my most favorite beverage ever, the Salted Caramel Hot Chocolate is back!  They didn’t have it last year which was pretty much devastating to my then-pregnant self, so I plan to get my fill now.

Trust me.

It’s ridiculously addictive and your wallet and waistline will be begging for mercy by Spring.

There is no rhyme or reason to this week’s menu.  Some of the meals are based on the random foods in the fridge approaching their due date.  The chili is to celebrate the start of football season (GO BEARS!!!!).  The Nachos are because Cinco de Nachos occurred while in Asheville and we need to get our Nacho Fix. Everything else just looked good when I went exploring at my favorite foodie sites.

Friday Foodstuffs Question:  I used my crock pot twice this past week.  I was so excited to get one as a wedding gift but now I rarely use it.  Breaking it out this week reminded me that crock pot dinners are simple and convenient so I want to start using mine more often.  What’s your favorite crock pot/slower cooker recipe?  Can you recommend a website or cookbook based around crock pot recipes?

Friday Foodstuffs...on Monday!

Ok, So I wrote this in Asheville but our hotel didn't have working wifi, so I had to let the blog lie dormant for longer than comfortable.  :-(  I am also WAY behind on my blog reader, but I will catch up eventually!

I’m starting to sounds like a broken record but we had another week of great eats!  I definitely accomplished my goal of making meals that were quick and easy (or at least could be made ahead of time).  This week was even crazier that I thought it would be and if I didn’t pre-plan we probably would have dropped money and gained pounds on take-out.

Eggplant Surprise was probably my favorite though instead of using ground turkey, I used ground spicy Italian sausage that I cooked and drained first.  It probably changed the whole feel of the dish, but the result was delightful!

The Bahamian Veggie Curry was a stupid choice for late summer in Savannah but it was still yummy. Luckily the recipe made a ton and I immediately froze half of it for when the air starts to cool.  The dish was time consuming due to all the peeling and chopping (I made on Sat, served on Mon) but if you have an older child learning to cook, this would be a good dish to help refine his or her knife skills. The recipe didn’t say how long to cook the final step, but I found that 25 minutes on medium was more than enough.  I did substitute the butternut squash with an additional sweet potato because my local Kroger only had mutantly large squash. They are out of season so I kind of expected a limited selection.

The Five Spice Tilapia was incredibly easy and took just under 10 minutes, start to finish. If you’re Catholic, it’s would be a nice Friday in Lent dish.  I suggest using the fresh stuff from your store’s fish guy and not the frozen, individually wrapped tilapia.  The frozen stuff is usually very thin and it might break apart when cooking.  It’s worth the extra $!

Next week’s menu is short due to our vacation. Planning was easy thanks to the three of you who left comments last week with your favorite dish!  I love dishes that make a lot for leftovers!

Friday Foodstuffs--What is your favorite recipe?

Another yummy week at the House o' Pip and we didn't succumb to the ease of take out once!  Woohoo!

My two favorite dishes from the week were the Chili Honey Chicken Thighs and the Stove Top Baked Beans. If you make the chicken using the thighs, I suggest broiling them for about 2 minutes to crisp up the skin. Careful, the honey can turn it from crisp to burnt in a matter of seconds, but the result is worth the potential failure.

Since I can't leave well enough alone, I also modified the beans a bit. I first caramelized a small chopped onion before starting the rest of the recipe (I used the canned bean version).  Super simple and yummy. It was perfect with some leftover barbecue we've had sitting in our freezer.

The theme for this upcoming week is"as easy as possible". I have a HUGE week at work and it will make for lots of late nights. It will also suck most of my energy and brainpower so I needed weekday meals that are quick, easy and can be prepared (or at least heavily prepped)  over the weekend. Also, I picked up my Food Co-op  order yesterday so I picked recipes that would use all the veggies I bought. All *starred* dishes have an ingredient I purchased from the co-op.

The plan is:

Saturday:  Eggplant Surprise*
Sunday: Grilled Steak and Grilled Zucchini & Summer Squash kabobs*
Monday: Bahamian Stew*, bread
Tuesday: 5 Spice Tilapia.  Stir Fry Veggies (the frozen in a bag kind)
Wednesday: Greek Omelet, Bacon*, Frozen Cherries in Greek Yogurt
Thursday: I'll be out drinking heavily with co-workers to celebrate the end of this major project/event. Brett's on his own a and Max pretty much sticks to bottles and rice cereal. 
Friday: Leftovers

Friday Foodstuffs and PIF Friday!!

Holy Crap did we eat well over the week.  Pretty much everything but the Spaghetti and Meatballs was a success. The two dished I would most recommend are the Butter Chicken and the Basil Lime Fruit Salad.

The Butter Chicken was un-frickin-believable.  Seriously delish and super easy.  However, I only used about half of the cream the requested.  Next time I make it I am going try adding some veggies to the dish.  I also might branch out and instead of cream, use coconut milk.  If you can get it, I suggest serving a side of naan to sop up all the delicious and fattening sauce!

The Basil Lime Fruit Salad was an awesome complement to our "breakfast for dinner" night.  I've made it before and it's a nice twist from a regular fruit salad.  It's perfect for a summer picnic or perhaps a baby/bridal shower. Again, I'd half the amount of the simple syrup poured over the fruit, otherwise it buries the natural sweetness.

Our grocery bill has gotten a bit out of hand over the past few weeks so with this weeks menu I tried to focus on recipes made from stuff we already had on hand.  I did a sweep of the freezer and cupboards before deciding on a menu.

Pay it Forward Friday-

The kindest thing someone did for me this week comes from my boss.  We have a crazy week coming up and have been preparing for it over the last 6 month.  Since "The Event" is about to reach it's climax, there is much to be done.  More than I can accomplish in my measly 24 hour work week.  Yesterday, when I realized there was no way I could leave at my regular time, she cleared me for some overtime.  Then, she said "Why don't  you go get Max and bring him here".  So instead of letting the poor kid sit in day care for an extra 90 minutes, I ran across the street, picked him up and brought him back.  I always keep a blanket in my office and toys in my diaper bag so I plopped him on the floor and let him play at my feet while I finished up a few things. I loved having him there.  It made working on such an arduous task a little easier when I could turn around to see my cute little dude smiling up at me. My boss didn't have to allow such a non traditional work arrangement and I am grateful for her kindness in suggesting Max come hang with us.  I do think she loved some baby time too!

Friday Foodstuffs and a Little Housekeeping

I actually made everything planned with last week's menu!  This whole being accountable on my blog thing helped!  Usually at least one of the meals I planned for the week goes to pot either because I forgot an ingredient or something comes up and I need an quicker meal.

Of all the meals the best was Brett's Grilled Ribeye.  Unfortunately, I'm not willing to loan him out.  Therefore, I suggest you try the White Fish with Parsley Sauce. Next time I make it however, I think I'll add some fresh lemon juice at the end.  I tried taking a picture of it, but the results did not make the dish look appetizing!

I've been a horrible crab for weeks now and this is just what I needed to remind me that there is good in the word.  I haven't been able to see past the idiots of the world over the last few weeks. Check out her blog for the rules and to participate.  It  hasn't been my most gold star of weeks so I don't really have anything to share on how I bestowed kindness to others.  There has been lots of kindness towards me, mostly from my awesome husband.  So, my goal this week to to be more aware and working on giving back to those who have been so awesome to me.

Two months ago Brett and I joined the Savannah Food Co-Op. Every two weeks we pick pick up a veggie box filled with all sorts of goodies.  We also get the most amazing bacon ever from Thomson Farms and ridiculously tasty eggs from Life is Good Farms.  Both are local farmers that haven't sold out to the man.  

The veggie box always has a unique mix of items and it has significantly increased the variety at dinner time. I love to cook and I'm pretty proud of the eclectic recipes I've found that utilize all of the box and any leftovers we might have in the fridge.  Since I know lots of other people are always looking for a new recipe, I thought I'd share my weekly menu each Friday.  In bloggy blog world, many people do this on Monday but my schedule makes meal planning and grocery shopping easier on Fridays. Plus, that leaves me the rest of the weekend to prep the weekday meals as much as possible.  Who wants to chop vegetables after a long workday?

Here's what were eating this week*:

Tonight:  Cinco De Nachos**
Saturday:  Date night.  A local sushi joint will be doing the work while Aunt Alison will be doing the babysitting.
Sunday: Grilled Rib-Eye Steaks, Roasted Sweet Potatoes with Balsamic and Rosemary.
Monday: White Fish with Parsley Sauce, Turnip Gratin
Tuesday:  Cheese-it Chicken (don't ask, it's horrible for you but so damn good) and Celery Root & Potato Mash
Wednesday: Italian Sausage with Penne and Cabbage
Thursday: Homemade Pesto and Chicken Pizza. 
Friday: Leftovers (leftovers are also are lunches for the week).

*Online recipes are shared.  Anything else is from memory/my head. I have 894302 cookbooks but I mostly use online recipes since I do meal planning at work I'm lazy.

**My husband makes THE BEST nachos and if we had no self control we'd eat them weekly.  So instead, we instituted "Cinco de Nachos" where we only have them on the 5th of the month.  Except yesterday he spent the evening rotting in the the Atlanta airport due to a canceled flight, so we pushed event back a day.
