It’s good to be home. The past few weeks have been
absolutely insane and it climaxed over the last 4 days. Since Thursday I’ve driven between
Cincinnati, Chicago, Akron and then back to Cincy.

It’s been fun to travel and see so many people but it has
taken a serious toll on my body. Too
much fast food and carbs. Not enough
fruits and veggies. I’m looking forward to a full week of cooking, minus
tonight where we are going out to dinner with friends. I think I’ll have a salad.
I’m sticking with Green Smoothies for breakfast and lunch
for most of the week to try and detox a bit. I’ll share any favorites. If you

Just like Meatless Monday and Cinco de Nachos, I’m adding a
new theme day to the rotation. Crockpot
Tuesdays. (It kills me I can’t come up with a good alliterative name for this.
Any ideas?) For the rest of the summer,
I will be attending a free evening yoga class in one of the parks in downtown
Cincy. Throwing something in the
crockpot will allow Brett and I to both have a hot meal, but at different
times. Otherwise, I’d be ruining a
perfectly healthy yoga class by eating fast food immediately after.

Saturday: Strip Steak, Feta and Chickpea Salad
Sunday: Leftovers
Dessert: Skinny Apple Pielets
For the Freezer: Beet Pancakes

I *really* enjoy reading your posts. I think I'm going to start our own Meatless Mondays. Also been thinking of doing green smoothies for awhile...I'll have to check this one out!
