Menu Monday: Getting Back to Normal


It’s good to be home. The past few weeks have been absolutely insane and it climaxed over the last 4 days.  Since Thursday I’ve driven between Cincinnati, Chicago, Akron and then back to Cincy.

Max got to spend time with his Great Grandma and eat at a restaurant that delivered meals on a model train.

Brett and I got to watch our favorite couple get married AND hang out in front of an awesome photo booth that looked like the T.A.R.D.I.S.!


It’s been fun to travel and see so many people but it has taken a serious toll on my body.  Too much fast food and carbs.  Not enough fruits and veggies. I’m looking forward to a full week of cooking, minus tonight where we are going out to dinner with friends.  I think I’ll have a salad. 

I’m sticking with Green Smoothies for breakfast and lunch for most of the week to try and detox a bit. I’ll share any favorites. Just like Meatless Monday and Cinco de Nachos, I’m adding a new theme day to the rotation.  Crockpot Tuesdays. (It kills me I can’t come up with a good alliterative name for this. Any ideas?)  For the rest of the summer, I will be attending a free evening yoga class in one of the parks in downtown Cincy.  Throwing something in the crockpot will allow Brett and I to both have a hot meal, but at different times.  Otherwise, I’d be ruining a perfectly healthy yoga class by eating fast food immediately after.

Here’s what we are eating this week.

Monday: Out to dinner
Meatless Wednesday (to make up for missing Meatless Monday): Spinach Ricotta Gnocchi and pesto pasta
Saturday: Strip Steak, Feta and Chickpea Salad
Sunday: Leftovers

For the Freezer: Beet Pancakes

I *really* enjoy reading your posts. I think I'm going to start our own Meatless Mondays. Also been thinking of doing green smoothies for awhile...I'll have to check this one out!
